Sambucaro
Sambucaro is a single-vintage blend of traditional olive varieties from ancient and new trees. Each year is different. The olives are handpicked, single-estate and chemical-free. This year, the harvest was completed in a single week during mid-season. The resulting cold-pressed extra virgin olive oil is yellow-gold with faint green highlights. It is smooth and rich, with hints of almonds, hazelnuts and blossom. The typical bitterness or pungency is mild despite the high polyphenol count.
Where to Find Sambucaro is a family-run farm with more than 2,000 olive trees, many of which date back hundreds if not thousands of years. The farm is located in the Niccone valley, deep in the Etruscan country which once dominated the peninsula. The valley remains quiet and undeveloped. Sambucaro produces top-quality, hand-picked, single-estate, chemical-free, cold-pressed extra virgin olive oil. The farm itself is almost entirely off-grid. Human intervention and mechanisation is kept to a minimum.
