Our EVOO is processed by cold centrifugation and stored in stainless steel tanks under Argon gas. This year, we will produce about 5,000 liters, but much more is expected when all the trees reach maturity. The olives are harvested by hand, placed in crates and processed the same day they are harvested. The harvest begins on October 1st because, at that moment, the oil is richer in polyphenols, which give it a distinctive smell and taste.
Where to Find The Podrug family has been engaged in olive growing since 1886, and only the family works in the olive groves. The harvests are done by hand and the olives are milled on the same day. We have 25 olive groves because we are located in Dalmatia, where the land is divided into small sections. We have 2,000 olive trees, all located in Piramatovci, next to the Krka National Park. Our most common varieties are Oblica and Krvavica. We started organic farming two years ago.
