Olive trees in Dalmatia are bathed in the sun for more than 2,700 hours a year. The olive groves of the Birin family were created in the stingy soil by the persistent and strong hands of our grandfathers, who stole it from the karst. Enclosed with stone lace, native Dalmatian olive trees are nourished by the warmth of the sun and stone. This is exactly why Insolatio 2700 extra virgin olive oil is unique.
Where to Find For more than two centuries, the Birin family has cultivated olives. Now, a new generation has proudly taken over this tradition, respecting the experience and knowledge of our ancestors while adopting modern agro-technical methods. We grow several olive tree varieties in five locations in the hinterland of Dalmatia, Croatia. Olives are harvested by hand and processed within 12 hours of the harvest by cold pressing. Our oil is of extra virgin quality with excellent characteristics.
