The slight bitterness and intensity of Selection H de Leos Fruité Mûr are a direct result of late harvesting when the oil is in organoleptic over-ripeness. The varieties of olives used in the extra virgin olive oil are Aglandau and Salonenque, with a little bit of Grossane to increase the fruitiness.
