This oil is harvested from very young trees, hand-picked or harvested with minimal machine support. The olives are immediately brought to the oil mill and transformed before being safely stored until delivery. The different varieties were put together in the malaxer: Pendolino, Oblica, Itrana, Ascolana, Amaurino, Moraiolo and Buza.

About Avistria
Founded in 2015, Avistria DOO owns about 85 hectares of red-soiled land in Sveti Lovrec, Istria. Avistria aspires to cultivate up to 15,000 olive trees following organic standards but currently produces olive oil from 35 hectares with approximately 400 old and 1,600 young trees. Avistria focuses on typical Istrian and certain Italian varieties. "Green" harvested olives, hand or vibro-picked with nets, same-day production with the highest standards in a modern "Pieralisi" oil mill.
