I grow olives on Shodoshima Island – the birthplace of Japanese olive growing and the most suitable place for cultivation – using compost made from olive branch prunings and the water extracted from the olive oil pomace. The olives are harvested according to the variety and ripeness of the fruit and are not heated or pressurized to produce high-quality olive oil.
