Vargnano
Vargnano is an EVOO obtained just from Nostrana di Brisighella olives. Nostrana di Brisighella is a native cultivar from the Emilia-Romagna region. These olives were harvested in early October, when they were still green, to conserve their proper flavors and polyphenols. Bright light green in color, it has elegant aromatic notes of fresh-cut grass and artichoke, which continue on the palate with great persistence. It has a highly refined green olive spicy finish.
Where to Find Palazzo di Varignana is a luxury resort in the hills of Bologna, comprised of 100 hectares of olive trees and other cultivations. The project started in 2017 with the first harvests of extra virgin olive oil, fruit juices and fruit jams. The food project continues to grow, and within four to six years, we will have around 100,000 liters of EVOO.
