Each tree is hand-harvested and the olives go from branch to our onsite mill within two hours to create our Tuscan Blend. Processed in small batches, the oil is adequately stored in air-tight stainless steel tanks in a climate-controlled room. This will ensure it stays fresh for its entire shelf life. We use organic practices in caring for our trees and olives.

About Sogno di Oliva

Our first trip to Tuscany inspired our olive farm. We returned to California and eventually found a plot of land in the beautiful rolling foothills of De Luz. We planted 500 Italian cultivars on our terraced hillsides and tended to our trees using only organic fertilizers. No chemicals are ever used. We harvest the fruit by hand with family and friends, mill it within a few hours at our onsite Italian mill and store the resulting oil in a climate-controlled room.
