Once a 12th-century Templar commandery, La Cavalerie estate sits in the foothills of the Luberon, within a UNESCO Biosphere Reserve. Owned by the Ungaro family—first Emanuel Ungaro, then his daughter Cosima—it boasts 4,000 olive trees. Its organic PDO extra virgin olive oil offers artichoke and raw almond notes with a peppery finish.
