In the beautiful Salento region, close to the sea, Vincenzo De Marco planted our first olive trees in 1885. At that time, the women working on the land sang to the trees during the harvest. After four generations, we still produce our oils with joy and care. Today, the harvest has been mechanized but still starts early in the morning. This method ensures the olives never touch the ground and are taken to the mill to become EVOO within five hours from collection.
