We are organic farmers firmly committed to the environment in everything we do. Throughout the year, we tend our trees before picking in October. Our grove contains four different varieties, and we harvest each at optimal ripeness, which affects the ratio of fruitiness and bitterness, spiciness and sweetness. The handling and harvesting of olives are critical to ensure pressing the same day of harvest to limit the potential for deterioration of our precious fruit.
It is always a great pleasure when your product and work are appreciated. This is our first year in the NYIOOC, and it has been delightful to get great results.
