It is made in October with the harvest's first olives, which are still green and fresh and preserve the maximum intensity of flavor and aroma. We control all stages of the production process carefully, from growing to cold pressing, to achieve the highest quality. The result is a balanced and delicious oil that satisfies the most exquisite palate

Villa Gaspar was born in 2020 after the death of my father, Gaspar. After his loss, we felt the responsibility to maintain his legacy and the urgent need to pay tribute to him. For this reason, we decided to create a premium EVOO of superb quality that comes exclusively from the olive trees that my father himself planted 50 years ago, and that we have named after him. Villa Gaspar is, therefore, the story of a legacy; a legacy that we want to perpetuate in time in form of this wonderful elixir.
