Šime is made of Krvavica, a native north Dalmatian variety, handpicked early in October. Its aroma is as intense as its green color, enriched with harmonic notes of wild chicory, green apple, artichoke, freshly cut green grass and tomato. It also has rich balsamic notes of mint, rosemary and sage, with a distinct almond note. The flavor is profound with balanced piquancy and bitterness.
