The olives for our Estate EVOO were harvested on November 10, 20 and 21, 2023. The olives are hand-picked, sorted and milled separately. We perform sensory tastings of each of our oils separately and then create an Estate Blend EVOO that provides optimal flavor all the way through your sensory experience. Our oil is a grassy, sassy oil with herbaceous notes of green tea, grass, green olive and artichoke. The polyphenol level for this oil is 516, in the high category.
