Oleum Artis is the best known of Marqués de Griñón's EVOOs. A combination of Picual, Arbequina and Cornicabra olives from their estate in Toledo, Spain, this EVOO has brilliant golden-green color and aromatic finesse. This estate-bottled oil is milled within two hours of harvesting. Its fragrance is lively and intense with notes of green tomatoes, freshly cut grass, artichoke and green almonds. These fresh flavors are followed by a pleasant spiciness indicative of its high polyphenol content.
