Koliva is prodiuced from Chemlali olives just as they reach maturity in November. The olives are picked by hand and cold pressed, respecting our ancient traditions. This allows them to retain their purity and full flavor.
Jalel Ben Amor, co-founder of Ben Amor Agricole, had studied and lived in the Kairouan region for 10 years, throughout his adolescence. It was a phase of physical and mental development, between the school above which he lived and the olive groves he visited and where he rubbed shoulders with his father.
