Il Cavallino farm is located in a region well-suited for olive cultivation. Additionally, our family's passion and experience in olive grove care have allowed us to establish and strengthen organic farming practices quickly.

I am Romina Salvadori and with the indispensable help of my family, I produce extra virgin olive oil in Bibbona, on the magnificent Tuscan coast south of Livorno. We have made extra virgin olive oil our way of life, conceiving life and its rhythms, even before considering it our job. We could not help but make extra virgin olive oil in an area with centuries-old traditions of olive growing.
