Olio Novello is made from the first harvest in October, when the olives are slightly greener, and bottled immediately, unfiltered. The result is a bright green oil, spicy with notes of grass and fresh olives. Novello is nitrogen sealed in 18/10 stainless steel bottles to preserve freshness.
