This is oil with moderate bitterness and spiciness and with the smell of fresh olives.
The uniqueness and quality of Dalmatian olive oil are based on the indigenous assortment of Dalmatian olive groves. The most important Dalmatian, and at the same time Croatian, variety is Oblica which makes up about 60 percent of the total Croatian assortment. In Dalmatia, it is 75 to 80 percent. Rocky landscapes facing south, slopes and hills unsuitable for irrigation and mechanized cultivation, the influence of the sea and indigenous varieties give olive oil of the highest quality.
