This is an early harvested Picual EVOO made with olives collected at night and milled in less than five hours. The result is pure and authentic oil with a medium fruitiness. The predominant notes are tomato, fig and banana peel. The bitter and spicy are at medium levels, very similar to the fruity noted, making this a very balanced EVOO. After tasting this oil, the final notes are those of aromatic herbs and green wood.
