Bambatsa Extra Wild

By Jordan Olivenoel

Bambatsa olive oil is extra wild because it is obtained from olives that were harvested too early. The taste is significantly tart and a little more bitter than the mild and balanced Jordan olive oil. Despite this, it is still suitable for any culinary application and pure enjoyment and dipping. Bambatsa is the name of the mountain slopes where the olive groves and the Jordan family house are located, on the south of Lesbos near Plomari, the capital of the Ouzos.
